Applesauce Muffins

This recipe is so easy it is great for beginner! But it can still always work for more advanced people. I was one of the first recipes that I learned to make.


Applesauce Muffins

Ingredients:
1 cup sugar
6/4 tsp. salt
1 tsp. soda
1 tsp. baking powder
1 tsp. nutmeg
1 tsp. allspice
3 tsp. cinnamon
3 cups flour
2 cups applesauce
1 cup oil


Mix all the ingredients together. Pour into a sprayed muffin tin. Bake for 18 minutes at 375 degrees. Makes about 24 muffins.
* These are perfect to freeze and throw in cold lunch for school.

Homemade Rolls 
(This recipe is quick and easy.)

1 cup hot water
1 tablespoon butter
1 package yeast (2 ¼ teaspoons)
¼ cup sugar
1 egg
3 cups flour
1 tsp. salt

Put 1 cup hot water in a bowl.  Melt butter in the hot water.  Let the water cool until warm.  Add yeast, sugar, and egg to the water.  Mix.  Add 2 cups flour and the salt.  Mix.  Add 1 cup flour.  (a little more if needed) Knead for 10 min.  Let stand to rise for 20 minutes.  Grease a 9x13 pan.  Shape into round balls.  (about 15)  Let rise until they double in size.  Bake at 400 degrees for 12 minutes. 

Tips:  I usually double the recipe and put them on a greased cookie sheet. It makes about 30 rolls.

Making Desserts for Young Women's Activity

In young womens the beehives were in charge and we decided to make desserts and take them to the presidents in the church.  We had each girl the presidency teach a dessert. I decided to teach them how to make Janell's Mock Turtle Cookies which I had just learned how to make! To find the recipe and a video tutorial (click here).  I really like this activity because you were teaching and there were people learning we also got to do service and give people a tasty treat!

VIDEO: Janell's Mock Turtle Cookies

This is a really fast easy cookies recipe that I love to make. I hope you enjoy! 

Janell's Mock Turtle Cookies 

Ingredients: 
Pecans, chopped
1/2 cup butter
1 cup brown sugar
2 eggs
2 egg yolks
1 teaspoon vanilla
3/4 teaspoon maple flavoring
3 cups all-purposed flour
1/2 teaspoon salt
1/2 teaspoon soda 
1/3 cup of evaporated milk


Preheat oven to 350°F. Chop pecans, place in a bowl, and set aside. In a large mixing bowl cream butter and sugar. Add eggs, egg yolks, vanilla, and maple flavoring. Mix well. Add flour, salt, and soda and mix well. Then add evaporated milk to make them stick (you may need to add a little more or less milk). Drop rounds tablespoonfuls into chopped pecans: gently press down (The nuts to be stuck in the dough at the bottom of the cookie) Place with nuts down on the cookie sheet lined with waxed paper bake for 10 to 12 minutes or until slightly golden around the edges and cookies are cool to spread with chocolate icing.


Chocolate Icing

Ingredients:
2 tablespoons butter
3 tablespoons cocoa
1 1/2 cups powdered sugar
1/4 cup evaporated milk


*I like to make the icing when the cookies are baking.
Cream butter and cocoa together in a small mixing bowl. Add powdered sugar and half of the milk; mix slowly.  Slowly add the rest of the milk. Mix until well blended.
