This is a really fast easy cookies recipe that I love to make. I hope you enjoy!
Janell's Mock Turtle Cookies
Ingredients:
Pecans, chopped
1/2 cup butter
1 cup brown sugar
2 eggs
2 egg yolks
1 teaspoon vanilla
3/4 teaspoon maple flavoring
3 cups all-purposed flour
1/2 teaspoon salt
1/2 teaspoon soda
1/3 cup of evaporated milk
Preheat oven to 350°F. Chop pecans, place in a bowl, and set aside. In a large mixing bowl cream butter and sugar. Add eggs, egg yolks, vanilla, and maple flavoring. Mix well. Add flour, salt, and soda and mix well. Then add evaporated milk to make them stick (you may need to add a little more or less milk). Drop rounds tablespoonfuls into chopped pecans: gently press down (The nuts to be stuck in the dough at the bottom of the cookie) Place with nuts down on the cookie sheet lined with waxed paper bake for 10 to 12 minutes or until slightly golden around the edges and cookies are cool to spread with chocolate icing.
Chocolate Icing
Ingredients:
2 tablespoons butter
3 tablespoons cocoa
1 1/2 cups powdered sugar
1/4 cup evaporated milk
*I like to make the icing when the cookies are baking.
Cream butter and cocoa together in a small mixing bowl. Add powdered sugar and half of the milk; mix slowly. Slowly add the rest of the milk. Mix until well blended.
